Lava Smash Cocktail
Ingredients:
3 ounces rum
8 frozen unsweetened strawberries, partially thawed
1/2 cup fat-free vanilla ice cream
4 ounces sugar-free calorie-free coconut-flavored syrup
(like the kind by Torani)
1/4 cup canned crushed pineapple with juice
2 artificial sweetener, sachets
1 1/2 cups crushedice or 8 -12 ice cubes
Optional garnish
pineapple chunk
Directions:
1Add rum and strawberries to a
blender and puree until smooth. Distribute evenly
between 2 tall glasses. 2Rinse blender. Place remaining
ingredients in the blender, and add 4 oz. (1/2 cup) cold
water. Blend at high speed until smooth. 3Very slowly pour
the contents of the blender over the strawberry mixture in
the glasses. If you like, garnish each glass with a
pineapple wedge. Enjoy!
