Fluffy Frosting
1 3/4 cup sugar
1/4 cup hot water
1/4 teaspoon ceam of tarter
1/4 teaspoon salt

4 egg whites(about 1/2 cup)
1 teaspoon vnilla extract
1.Combine sugar,water,cream of tarter and salt in saucepan.
2Bring mixture to a boio reduce heat to low and cook until a small amount of the mixture forms a hard boil in cold water.
3.Place egg whites in small mixer bowl and beat until stiff but not dry.Limited use of a rubber scrapper may be necessary to distribute egg whites for even beating.
4.Add vanilla extra and then gradually add sugar syrup while beating until frosting forms stiff peaks,about 5 minutes.
Make enough frosting to cover tops and sides of two 9-inch cake layers or three 8-inch cake layers.
